Topical.Bakers warn against transporting bread over long distances
With the arrival of the cyclone which caused a temperature rise in Ukraine the risks of food storage and transportation increased. In particular, bakers draw attention to the fact that the traditional fresh bread is not designed for transportation over long distances. According to the standards, the shelf life of white bread is 24 hours, rye bread – 36 hours, small bun goods (rolls and buns) – 16 hours. Packaging can lengthen the shelf life of bread, but even when packed the product requires proper temperature control – bread should not be stored or transported at temperatures above 28 degrees Celsius.
Valentyn Melnychenko, Chief Innovation Technologist of Concern Khlibprom PJSC says, "Fresh bread is always consumed in the place it is manufactured. As it is a living product characterized by microbiological processes. When leaving the oven the surface of bread is almost sterile. However, when stored with high humidity at temperatures of +25-30 degrees the accelerated deterioration of natural products takes place. Therefore, even when buying in stores, pay attention to the temperature regime they support."
For home consumption in the hot season, experts advise not to have bread in store, but in an amount sufficient for one day only.
Valentyn Melnychenko says: "If you keep bread in the refrigerator, keep in mind that at temperatures below 5-6 degrees the shelf life of the product will expire faster; bread can get crumbled as it loses moisture.
As for the storage of bread in a wooden bread bin, pay attention to the fact that it tends to keep spores of mold. That is why in the summer wash it with 9% vinegar at least once every three days. And what is the main – make it a rule to buy bread every day."
